Sweet Potato Pie-In the oven

   Good morning Saturday dear Friends,

     I finally got the sweet potato pie in the oven this morning.

     I only have this tiny electric stove here at the lake house. I so hope we can change over to gas this coming new year.  As most of you may remember I had to leave behind my 10 burner-2 oven commercial stove behind when we moved--I really miss that stove and the ovens. It had a very large oven that accepted commercial size cookie sheets and then a much smaller oven. So awesome for holiday baking.  I remind myself though that Larry left behind so much more in tools and equipment. I sometimes regret the downsize, but I do enjoy the views of the lake and that this area is very "country".  Which is us. The area around the woods property has really grown a lot-so I would not enjoy fighting all that traffic for food shopping  

  I looked for a different recipe this time, and found one with much less sugar added. I found cans of organic sweet potato puree for the pantry. Larry prefers sweet potato pie over pumpkin-for me they taste the same haha

   I was going to bake this for Thanksgiving but had forgotten to pick up those little cans of cvaporated milk. I looked up how to make this-as way back when these were not available in stores.  You start with 2 cups of milk and slowly cook it down to 1 cup of milk. I wasn't in the mood to stand at the stove stirring after about an hour-so this morning I heated water in a pan and put the smaller pan with the milk inside of that. So I didn't have to constantly stir.

  For my crust I used raw walnuts and gluten free graham crackers-blended up with the plant based butter and used coconut sugar.   For the filling I  used Swerve keto brown sugar for the sweetening. It is in the oven now so am anxious to see how this bakes up.

  It rained here most of last night and still raining this morning. The concern is all of this turning to ice as we are getting much colder going forward-into the teens tonight. Well I don't need to go anywhere-except to collect my mail which is up the stairs and up the steep hill. We have been getting a lot of Sunday deliveries of packages from the Post Office now and I have few coming in.

  So far the furnace is holding up, was hoping they would have called to put the new part in today but no. Just started making the louder noises again this morning not good with the frigid temps coming in. The repair guys told us it could burn out the motor-well if that happens the parts are still under warranty

  The pie is out of the oven just now. I am saddened the top edge of crust is much over done, but hopefully just the edges. I almost did not bake at the 425 degrees for first 15 minutes in this old electric stove/oven. Hoping the rest of crust is ok.  Smells good though




Did you watch the Macy's parade?

    This year I am really noticing my senior age and remembering my Mom last time I watched the parade with her. She said -- this is for the younger generation now-I don't like any of this music-not what I grew up with. This is happening to me now-I never heard of any of the singers and didn't care for most of it. I record the parade to buzz through the commercials and skip parts I don't like . I mostly enjoy seeing those huge balloons and I don't care for the recent hosts either. Oh well that's just me haha

  I was able to watch my two favorite teams Thanksgiving day-the Green Bay Packers won their game-they have an excellent team this year and I love their new quarterback. The KC Chiefs could have won their game but way too many penalties and mistakes  Mahomes tries to do everything but he needs his team to play well-and they are not. No playoffs for them this year. Notre Dame college plays today.

  1. Your pie looks good and hopefully it's not too brown on the bottom. You never know unless using a glass pie pan. I'm with your mom - I no longer relate ( nor do I want to) to the Thanksgiving parade. I'm not a big parade person anyway, so there's that. Enjoy your pie and keep warm!.

    2. I just cut us each a slice of pie-with all the healthier changes I did in the recipe this turned out delicious and the crust did not get burnt so happy about that

  2. Well i watched maybe 5 minutes of the parade then did not have the patience for it.. like you say it has 'moved on from me'... I'm afraid if i had to make all those changes to be able to eat a pie i'm afraid i might not eat pie... but i admire you for being willing to do that and your pies turn out so well... I have these little aluminum covers that i put over my pie crust edges about halfway through the bake.. We are getting cold here tonight.. down in the 30's... brrr......its about time for it to get cold... gonna be difficult to make mysself decorate in the 70's.. lol ! :) Hugs! deb
