Brrrrrr we have fall weather-much cooler and rain in the evenings lately. Actually feeling more like autumn-I guess it's time now that Thanksgiving is just around the corner.
I had not made us pizzas since before last early spring-when I got diagnosed with the acid reflux issue. No acid foods of any kind which includes tomato sauces.
I always make us homemade - a gluten free crust and a wheat crust. I searched online for ideas to replace the pizza sauce for me I found basil pesto-just basil and olive oil. I did have a jar in my pantry which included ground nuts, garlic not on my list- and cheese. I used it since it was my best option. I did find a white sauce recipe acid reflux friendly but it didn't sound all that good to me.
Our pizzas turned out delicious including mine. Just a little burning from the garlic but was pleased with it.
The first photo is the "normal pizza" I usually put loads of mozzarella cheese on top our pizzas-but I cut way back on the cheese this time-as we get older more difficult to digest dairy products Black olives were on my list and I also added canned portobello mushrooms

Speaking of dairy products-when I went shopping I found plant based cream cheese and plant based butter-I am hoping the butter will work in my cooking baking. Butter is Not on my food list any more sigh Larry found a couple sites online that sell all sorts of plant based cheeses-so I will be checking that out had no idea these were being made. Being rural we usually see new items last in our food stores.

DeleteI make non-dairy cheese at home and it's very fun to make. I also buy it when the price is right. We also only use non-dairy butters. Can't have dairy.

Good morning, I have always cooked from scratch-I grew up that way as my Mom grew up on a farm. I have always had to figure things out for our diets. I figured out on my own in the '80's that I had celiac-no doctor at the time could help me. This was the first time I have ever seen the non diary butter and cream cheese before--but living rural we are the last to see new items.

I grew up with a scratch kitchen and am also a scratch cook and baker. That said, even though I make my non-dairy cheese, I will also buy it when it goes on sale.
DeleteI never really baked with cow butter or eggs so I can't tell you what the differences are. And when I do most bakes, I don't use the non-dairy butters. No eggs either. Though when I make popovers for hubby, I will use eggs for that.
All of that said, the times I have used it, it's been without any issue. In fact, this week I've used the olive oil plant butter in a few cookies and it worked great. But again, I never really baked much with real butter so I can't tell you the actual differences. If that makes sense.
Oh, I do use the plant butter mixed with honey and cinnamon and Tim LOVES that. He puts it on bread. And then other times, just honey butter. And then other times local down the road, maple in the plant butter, whipped up.
He loves it. And he's eaten plenty of cow butter in his past days and he still really enjoys this.
Once again I’m reminded of your talent for paining florals. We did a butterfly in panting class once and I had a terrible time with it. Yours is great, no question what it is. It reminds me of advice from our instructor not to worry about detailed painting, just to try for a “representation” of a subject instead. No question yours is a butterfly! I’m often so into details that I lose recognition of the original subject. Beautiful, Kathy!

DeleteOh yeah give me pizza any day. Mr. M. doesn't like sauce and I'm like you can't eat it. So I just put a thin layer of grapeseed oil on the crust. Let me know about the plant base cheese. I am so impressed with your watercolors. So glad you have taken that up. Have a good day today.

I like your painting-you are too hard on yourself. If you paint everyday or as often as your time allows-you will see a huge change in your art making. I know this from experience. It takes the work put into it-that's all! We are cold here too-but it could be worse. Yum your pizzas look so good! My hubby has acid reflux too-he's on meds for it but also diet change.

DeleteI was on two different meds for the acid reflux since April of this year-I took myself off of those as I am seeing no improvement even with all the diet changes. first of this month I changed over to an organic aloe vera liquid-it's expensive but the worst of the constant burning in my chest has finally diminished a lot it is called Aloecure so far the best price I found is on amazon It says to take 2 ounces before a meal but to make it last longer-it is a small bottle-I take one ounce before a meal.
I didn't think the constant burning would ever stop.
So good to see you watercoloring Kathy! It may not be what you were after..but i like it! Alvin likes a Philly Steak and Cheese pizza and i think it has an Alfredo Sauce on it.. He loves it... as he is not crazy about tomato sauces .... I'm glad you found something you like and other items to explore...

Larry suggested a white sauce but to make one for the acid reflux didn't sound all that good to me, a lot of cheese I can't eat any more-must be low fat.

I get you with the ' I refuse' to mow anymore... And i wouldn't have ... i would have been fine with the grass the way it was until Spring... but we live in an HOA enviroment... and i was not going to mow all Spring and Summer just to get a fine in November...lol uuughh... The pizzas look delicious, Kathy, and this is the time of year when heating the oven to bake them makes the house so warm. We like pesto so maybe a future pizza will have that choice, but we also like cheese.

Kathy it sounds like you are a great deal like my hubby...he has to be gluten-free and suffers from acid reflux. Just never sure what will set it off and he is dairy intolerant as well. It does make cooking a bit of a challenge but it looks as if you are learning to find good things that work. Yes our weather has turned colder and by Thanksgiving...much colder...will put us in the mood for the holidays! Hope you have a delightful Thanksgiving. Hugs!
ReplyDeleteI wonder if the gluten free and acid reflux go together. I figured out on my own back in the 80's that I had celiac so a lot of years gone by before the acid reflux. I have always had issues with dairy so just ate that once in awhile-I am going to be trying the plant based dairy items more soon Happy Thanksgiving
