Good Morning Monday & My Chocolate Chip Cookies & Updated

 Good Morning Dear Friends,

   Thank you for all of your kind comments on my last post-sometimes I just need to reach out to some one to share and "talk" with. 

     Sadly when we moved to the lake-our friends have not kept in touch with us when we moved, and my only family left is my brother-who lives in Indiana (our home state) and although I forgave him for what he did when our Mom passed - I don't reach out to him. If he calls me I will be friendly to him, that's all I can do for myself. 

      My online friendships and slow mail friends are my "lifeline" now. Love you all Hugs

  Brrr it is chilly here but so thankful no wintry weather. Prayers for all of you impacted by the blizzard hitting the east coast. Sounds horrible Hope you all still have electric service. Good time for getting the woodstove going and/or a fireplace if you have those. I do miss not having a working woodstove.to use-those are great to cook on too.

  I am soooo happy with my chocolate chip cookies-they are baking up so much better now after I added in more gf flour to the dough last night. The ones I baked last night after they cooled down were crispy after 30 minutes or so but these are much nicer this morning.

 Sometimes when you change up ingredients in a recipe one needs to adjust a bit.

I stopped using the Original Toll House cookie recipe years ago-so much butter and sugar in those for us now. I found a chocolate chip cookie recipe from King Arthur that I really like. I found the recipe here online I also bought a cookie book years ago from King Arthur that I really like too.

  My changes for this recipe were-gluten free flour, instead of the sugars I used Swerve and Lakonto brands-keto sweeteners, and a little coconut sugar. Instead of a stick of butter I used a stick of plant butter and instead of vegetable shortening I used coconut oil. It called for almond extract I omitted that and I always omit salt in recipes now. I did add the apple cider vinegar. I liked that this recipe used just one egg. I  also used 100% cacao chips by Ghiradelli-these are hard to find sometimes, but my local small Wal mart had them at the time I bought them. These chips have a deep dark chocolate flavor.







   Any chocolate is not on my list of foods at all for the acid reflux issue-so I will need to freeze these and just eat one or two once in awhile.  Lots of times when we change up so many ingredients the recipe can be a big flop-this one just needed more flour added.

   Update on my slow stitch bags. 

       I had major brain fog over the winter months so didn't get back to these bags. I had one already to finish up and I just didn't remember how I did it-or understand the instructions for some reason.I think mostly from lack of sleep.

     So today I am back at it-so simple, but I had made a mistake that needed taken out-so am now sewing the lining to the bag. After that turn-sew a couple seams together from the handles. My layers are fairly thick adding fabric to the back of the slow stitches so when turned the first bag did not lay flat-so I embroidered all the edges.  I took lots of photos of that so I will know on the third bag-if I forget again. No fun being a senior some days haha

   Very soon will be mailing out the first bag, but I want to sew something else to go with the bags.. Good to be back to this project again-I really enjoyed all the slow stitches on the outside of these bags.

    1. I can share what I learned-the biggest improvement for me was stopping the medicine the doctor had given me-that made it all worse.

  4. I've used these Ghirardelli chips before, and they are tasty. Your cookies look tempting. It makes me want to go bake some, though I don't need the calories right now. :) hugs-Erika

  6. Yeah on cookie success!!!!! I've recently had frozen banana cookie success... The wind here is trying to blow us away!!! almost 80 today... The kids toys outside are trying to blow away... i need to go collect them up... uuugh.. We had a trip to Big Springs yesterday.. about 90 miles... Hub needed xrays on his knees before they would give him another rooster comb shot... I know they are going to push him to knee replacement... but after heart surgery we are leery of doing that.. the rooster comb works for over a year so why not continue.. ? anywyay ... sounds like your up and running on your bags again, thats such good news..     1. Good morning, I was so happy with these cookies-a lot of times switching up so many ingredients they turn out not so good-so this one is a keeper recipe.
      we have been very windy here too-but it is blowing in some warm weather. around 70 a couple days a week-I just finished stitching the lining to the bags-turned it to the right sides and now it needs a good press on the edges-and do the rest of the stitching. feels good to get back to this project-I pretty much stopped everything after Larrys accident.

  7. Hi Lisca, yes I was so pleased with the success of these cookies. I will take some photos-before Larry's bad accident I had cut out enough of my hand dyed fabrics to line 9 of these bags-the outside of the bags are lots of hand dyes in a puzzle type pattern with slow stitches. I am quite pleased with these so far

  10. Your chocolate chip cookies look very good. Ghiradelli is a good chocolate to use.
    I think moving away often has as a result that old friends don't keep in touch. Since we moved to the States, almost all our contacts to old friends slowly disappeared with the exception of one very good friend. We still email a lot, as well as a few other friends in other European countries as well. When a really good friend here moved to Oregon a few years ago, our friendship has become way more distant. Emails and phone is just not the same as personal contact. It's sad, but that's what it is.

  11. Kathy, you are not alone in having friends "disappear" because of moves. It usually takes effort on both ends to remain in contact and while I try to do that, many others just do not. It's the "out of sight, out of mind" syndrome. Like yourself, I enjoy sending cards, notes and "snail mail" but have noticed that many others do not and in fact have even stopped sending holiday greetings of any type, not just Christmas. Regardless, I still reach out because I believe that getting a piece of mail is still "special." Your coookies looked good and glad the recipe change worked better.

    1. Good morning-I totally agree with you. In the past I had asked a few friends if they would enjoying slow mail letters-most said no-didn't want to pay for the postage stamps and didn't want to write letters-that is rather sad to me. I love writing letters and receiving them in my mailbox too.
      I need to take some time to start writing a few for spring time hugs

  12. King Arthur's recipes usually are very good. I usually bake with erythritol or xylitol..they work just like sugar.
