Thank you for all of your kind comments on my last post-sometimes I just need to reach out to some one to share and "talk" with.
Sadly when we moved to the lake-our friends have not kept in touch with us when we moved, and my only family left is my brother-who lives in Indiana (our home state) and although I forgave him for what he did when our Mom passed - I don't reach out to him. If he calls me I will be friendly to him, that's all I can do for myself.
My online friendships and slow mail friends are my "lifeline" now. Love you all Hugs
Brrr it is chilly here but so thankful no wintry weather. Prayers for all of you impacted by the blizzard hitting the east coast. Sounds horrible Hope you all still have electric service. Good time for getting the woodstove going and/or a fireplace if you have those. I do miss not having a working woodstove.to use-those are great to cook on too.
I am soooo happy with my chocolate chip cookies-they are baking up so much better now after I added in more gf flour to the dough last night. The ones I baked last night after they cooled down were crispy after 30 minutes or so but these are much nicer this morning.
Sometimes when you change up ingredients in a recipe one needs to adjust a bit.
I stopped using the Original Toll House cookie recipe years ago-so much butter and sugar in those for us now. I found a chocolate chip cookie recipe from King Arthur that I really like. I found the recipe here online I also bought a cookie book years ago from King Arthur that I really like too.
My changes for this recipe were-gluten free flour, instead of the sugars I used Swerve and Lakonto brands-keto sweeteners, and a little coconut sugar. Instead of a stick of butter I used a stick of plant butter and instead of vegetable shortening I used coconut oil. It called for almond extract I omitted that and I always omit salt in recipes now. I did add the apple cider vinegar. I liked that this recipe used just one egg. I also used 100% cacao chips by Ghiradelli-these are hard to find sometimes, but my local small Wal mart had them at the time I bought them. These chips have a deep dark chocolate flavor.
Any chocolate is not on my list of foods at all for the acid reflux issue-so I will need to freeze these and just eat one or two once in awhile. Lots of times when we change up so many ingredients the recipe can be a big flop-this one just needed more flour added.
